The Commanderie du Bontemps plays the role of ambassador all the world over for the wines of these three great regions and helps to maintain the local traditions associated with wine.
The costume is a simplified version of that worn by the ancient Commanderies, comprising ample folds of velvet in Bordeaux-red or golden-yellow, enhanced by a cloak of green for the Commanders of the Médoc, Sauternes and Barsac, and of green and gold for those of the Graves. The buckle holding everything in place is a facsimile of the bontemps (the "bontemps", a wooden bowl in which the cellar-master beats the egg-whites used for fining and clarifing the wine). The bontemps served as a model for the Commanders' head-dress, a hat of wine-coloured velvet and white organdy symbolizing the wine-stained wood and the beaten egg-whites.
The Commanderie is an association of the three great wine activities, vine-growers, brokers and merchants. The vine-growers bring their personal presence, their know-how, their land and their installations, the brokers their knowledge of the product and of men, the merchants their relations, their practice in the markets, and their world-wide opportunities.
